FIELD OF THE INVENTION The invention relates to the food industry, in particular to a method for producing a whole muscle meat product. The purpose of the invention is to obtain a product with a filling and preserve the integrity of this filling. The method of obtaining a whole-muscle muscle product involves the simultaneous extrusion of the body of the product from pieces of whole-muscle meat and the outer layer of fatty material into a flexible outer shell of plastic or similar material by means of an extrusion head with a three-fold channels located in it, extruding the filling through the central kahal. from spruce, pt-dvoritelno mixed with part of a fat base to obtain a thick fluid mass, through the middle pieces of whole muscle, and through the outer th - fatty material. The apparatus for producing a whole-pulped meat product comprises a mandrel 1, into which the extrudable components are fed, and an extrusion head 2 for co-extrusion. The mandrel contains a central tube 3 into which is fed from a funnel 4 along oo oo oo N2 CM a filling nozzle 5, a first pipe 6 into which the pieces of the whole muscle machine and an outer pipe 9 are supplied from the funnel 7 through the connection pipe 8 and into the feed pipe from the funnel 10 through the connection pipe 11. Each funnel includes a blade pump with adjustable flow . The extrusion head is removable, made of plastic and secured with the possibility of being removed on the mandrel by a bolt 12. The head contains a central channel 13 for the filling, as well as concentrically arranged channel 14 for meat and channel 15 for fatty material. At the same time, the outlet portion of the filling channel 13 is made expanded, and the channels of the extrusion head are a continuation of the mandrel tubes. The expansion of channel 13 gives the whole muscle max the maximum space and the minimum possible resistance in the mandrel. A sheath 16 of plastic or similar material is screwed onto the extrusion head. The device works as follows. The funnel 7 is filled with pieces of whole muscle meat, the funnel 10 is filled with fatty material and the funnel 4 is filled with stuffing. At the same time, the mandrel is closed from the front at the beginning, and the three pumps located in the funnels feed the indicated components through the extrusion head 2, the mandrel 1 into the flexible casing 16. The combined extrusion continues until the desired length is obtained. Then, the co-extrusion product is cut and pressed into the back extrusion casing, and in this operation the front side of the next casing is clamped. The product obtained according to this method (fig.Z). includes the main body A of pieces of whole muscle, surrounding the central axially extended filling B. Body A is surrounded by a fat ring C, which in turn is surrounded by an outer flexible sheath D. This product is intended f with but for heat treatment in a vertical plane. The core of the filling can retain its extruded shape both during freezing, thawing, and during heat treatment, while, when cutting the product into pieces, the slices from the cut, being rather thin, retain the core of the filling. On fig.Z filling depicted with a circular cross section. In practice, the dynamic interaction between the whole muscle mash and the filling leads to a more irregular shape. Claims (3) [1] 1.
