Device for a machine for food preparation.
The present invention relates to a device for a machine for food processing, such as a cutting machine or chopper. Such a device has aluminium parts, such as cutting discs pre-fitted with knives and feeding means, which are in contact with the food being prepared. An example of such a device is a vegetable cutter, i.e. a device for cutting and chopping up vegetables and root crops.
In commercial kitchens and restaurants, such special vegetable cutters are used to chop vegetables and root crops.
A known such device is disclosed in the US patent US 3,468,355. That device is so constructed that a feeder is provided, comprising an upright oriented cylindrical tube and a feeding means in the form of a plate which is arranged perpendicular to the longitudinal axis of the tube. The plate is manually driven or displaceable in the tube. The plate is also pivotable out from the upper orifice of the tube so as to allow insertion of the vegetables or root vegetables to be chopped. At the lower orifice of the tube, there is a cutting tool or a combination of cutting tools comprising a disc provided with one or more knives. As the disc rotates and the contents in the feeder are pressed down against the cutting tool, the latter cuts the said contents into pieces, which thereby pass down through openings in the cutting tool.
There are also other cutting machines with other feeders and feeding means. There are also other detachable parts that come into contact with food being prepared.
Said feeders and feeding means, and also other detachable parts, are often made of cast aluminium, where the alloy EN AB 44300 (ASTM 413) is commonly used. This alloy contains silicon. Machine details are manufactured by casting, after which they are ball burnished with steel balls so that the surface is sealed and becomes shiny.
The silicon content has the consequence that, if the parts are washed in a dishwasher with commonly occurring detergents for catering kitchen machines, silicon, in the form of a black coating of black silicon oxide, precipitates onto the surfaces of the discs. This coating also easily deposits on the fingers of the operating staff, and furthermore on the food being prepared, apart from the discs not giving the impression of being clean. This has resulted in that the staff dishes the parts manually. Thereby, there no precipitation accrues.
Because parts must be washed frequently, it is a significant drawback to have to wash the dishes manually.
The present invention solves this problem and provides aluminium parts that can be washed in the dishwasher without their appearance changing.
The present invention thus relates to a device for a machine for food processing, such as a cutting machine or chopping machine, which device has aluminium parts, such as feeders and feeding means, cutting discs, and other parts being detachable from the machine and in contact with the food being prepared, which aluminium parts are made in die-cast aluminium, and ischaracterised in thatan aluminium part, after casting and cleaning and any processing, is surface treated, in that the treated surface is arranged with a Teflon layer, and in that the surface treatment is performed so that the surface tightness of the aluminium part is increased to a surface roughness value Ra below 5 microns.
In a preferred embodiment, the surface treatment is carried out so that the aluminium part surface density is increased to a surface roughness value Ra of less than 4 microns.
Below, the invention is described in more detail, partly in connection with the accompanying drawing, in which Figure 1 shows an example of a cutting machine in an exploded view.
In Figure 1, numeral 1 denotes a machine housing, the numeral 2 a knife housing, the numeral 3 a feeding cylinder, the numeral 4 a dicing grid, the numeral 5 a cutting disc and the numeral 6 a feeding plate. The cutting disc 5 is arranged with radial blades 7 and the dicing grid is arranged with vertical blades 8. All these parts, except for the housing 1, are dishwasher safe if made according to the present inventive.
Depending on the machine type, there are several other details that may be washed in a dishwasher if they are manufactured in accordance with the invention. The details shown in Figure 1 shall therefore only be seen as examples of details that can be manufacture according to the invention.
Thus, other aluminium parts than those listed above are covered by the present invention.
The present invention relates to a device for a machine for food preparation, such as a cutting machine or chopping machine. The device has aluminium parts, such as feeders 3, 6 and feeding means, cutting discs and other parts that are detachable from the machine and that come into contact with the food being prepared.
The aluminium parts are made of die-cast aluminium.
According to the invention, an aluminium part, after casting and rinsing and any processing, is surface treated and the treated surface is provided with a Teflon coating.
The surface treatment is performed so that the aluminium part surface density, or surface tightness or seal, is increased to a surface roughness Ra value below 5 microns. The Ra value is the Arithmetic average Roughness, which is the arithmetic mean of the elevations and depressions in the surface relative to a mean line.
It has surprisingly been found that the Teflon layer adheres to an aluminium part which is treated in the above described way to such extent that the layer of Teflon does not become detached from the aluminium in use or during machine washing. Not even when a sharp object has made a scratch in the Teflon layer down to the aluminium does the Teflon layer at the scratch release during use or machine washing.
There are several preferred embodiments to achieve said Ra value.
According to a first preferred embodiment, said surface is formed using ball burnishing or tumbling, followed by blasting with aluminium oxide.
According to a second preferred embodiment, said surface is formed using ball burnishing or tumbling followed by a hard anodizing.
Hard anodizing occurs at lower temperatures and higher current density than conventional anodizing. Sulfuric acid is used as electrolyte. The anodizing creates aluminium oxide on the aluminium part surface. The hart anodizing provides a surface layer with a higher proportion of oxide.
In a third preferred embodiment, the surface treatment is performed using ball burnishing or tumbling followed by flame spraying with titanium oxide.
During flame spraying with a powder, the powder is melted by a flame of acetylene and oxygen gas, which heats the powder to a molten or semi-molten state, which powder is sprayed in micron-sized particles towards the substrate to be coated.
After the surface treatment, a layer of Teflon is applied to the surface. In a preferred embodiment, the layer of Teflon is applied as a dispersion which, after drying, is sintered in a furnace.
It is preferred that said Teflon is a Teflon which is marketed under the designation Whitford Xylan 8810 or a Teflon which is marketed under the designation F2894 FLUON OC9607 SILVER.
It is further preferred that the aluminium part is a feeder, comprising a cylinder or a part of a cylinder and a feeding means running therein, arranged to feed ingredients to a cutting disc (5), or the corresponding.
Aluminium parts according to the present invention maintain their surfaces intact during machine dishwashing.
Above, a number of embodiments have been described. The invention is not limited to the above working examples, but may be varied within the scope defined by the enclosed claims.

Device for a machine for food processing, such as a cutting machine or chopping machine, which device has aluminium parts, such as feeders (3,6) and feeding means, cutting discs (7), and other parts being detachable from the machine and in contact with the food being prepared, which aluminium parts are made in die-cast aluminium, characterised in that an aluminium part, after casting and cleaning and any processing, is surface treated, in that the treated surface is arranged with a Teflon layer, and in that the surface treatment is performed so that the surface density of the aluminium part is increased to a surface roughness value Ra below 5 microns.
[2] 2. Device according to claim 1, characterised i n that the surface treatment is performed so that the surface density of the surface of the aluminium part is increased to a surface roughness value Ra below 4 microns.
[3] 3. Device according to claim 1 or 2, characterised i n that the said surface treatment is performed using ball burnishing or tumbling followed by blasting with aluminium oxide.
[4] 4. Device according to claim 1 or 2, characterised i n that the said surface treatment is performed using ball burnishing or tumbling followed by a hard anodizing.
[5] 5. Device according to claim 1 or 2, characterised i n that the said surface treatment is performed using ball burnishing or tumbling followed by flame spraying using titanium oxide.
[6] 6. Device according to claim 1, 2, 3, 4 or 5, characterised in that the layer of Teflon is applied as a dispersion which, after drying, is sintered in a furnace.
[7] 7. Device according to claim 1, 2, 3, 4, 5 or 6, characterised in that the said Teflon is a Teflon which is marketed under the designation Whitford Xylan 8810 or a Teflon marketed under the designation F2894 FLUON OC9607 SILVER.
[8] 8. Device according to claim 1, 2, 3, 4, 5, 6 or 7, characterised in that the aluminium part is a feeder, comprising a cylinder (3) or a part of a cylinder and a feeding means running therein, arranged to feed ingredients towards a cutting disc (5) or the corresponding.
