Various technological solutions allow the manufacture of square skewers, in particular the use of a square or rectangular container in which is sucked successions of stacked food layers. The racking is done by means of a network system of racking tubes and push rods. Each spike is housed in each tube. The push rods hold the spikes in position in the tubes and allow racking food in the container by pushing the spades through the tubes into the food in the container (confers patents JACQUES DOLLE FR 81 20367 + FR 80 24482 and following).
Regarding kebabs of other shapes than square, there are various systems including automatic machines including plate systems coupled together and having fingerprints able to receive the ingredients. These plates are assembled to form a conveyor in the form of an endless chain. The entire conveyor is subject to control means for stepping the plates facing a racking station adapted to engage a spike in the ingredients positioned in the footprints. Note that each footprint is generally rectangular in shape and the dimensions of the footprint, including its length, width, depth, and possibly its geometric shape, must be determined at the time of manufacture of the equipment which leads to freeze the composition of the skewer in its shape and its ingredients and in the spades used.
The problem to be solved by the present invention is the manufacture of skewers having ingredients of all shapes, round, square and allowing modifiable combinations of the various ingredients using a container called mold V and longitudinal formed of 2 oblique plates forming an open funnel on the angular part of the V, and a V-shaped counter mold (open or closed funnel) which holds the ingredients without crushing them with an adjustable horizontal and vertical tamping thanks to a tamping comb . The V shape can be repeated in one, two, three, six, ten times etc ... it can be arranged horizontally, vertically, or inclined.
The present invention makes it possible to skewer the ingredients of any shape with skewers with skewers of cylindrical section, flat, variable or non-rectangular, or any other geometrical shape, such as so-called flag pikes, but without being limiting in relation to this precise type of spades, and more generally, all spades and all materials such as wood, stainless steel, plastic food or others with any form of tip gripper or end ... with several possible combinations of forms during the same racking session.
The filling of the V-shaped mold is done manually or automatically, the ingredients are deposited there and are headed by a so-called v-shaped plate inverted, manually or automatically descended, and coming to imprison the food without crushing but constraining to the desired size by a compacting comb system fixed under the counter mold V. The use of this V-shaped mold can be manual, semi-automatic or automatic. The use of removable buckets as a food carrier facilitates the racking of several sizes and shapes of products in various combinations simultaneously. Buckets are separate elements that are attached, welded, machined or molded from plastic, metal or composite material. They allow the immobilization of food before and during racking. They are shaped half-prism or half-cylinder hollowed out and can be made with special shapes like prawns, cherry tomatoes, olives, mushrooms, fragile ingredients. The buckets are sliding and are freely positioned on the part called "mold" of the machine.
Then the assembly is associated and pulled or pushed according to the version (manually or automatically) and the assembly is hooked on the spades previously arranged (manually or automatically) on support guides spades, preformed and because of their design, to receive any form of spades, thus crossing the ingredients.
A spike guide support allows the holding of the spike to be introduced in the middle of the ingredients, so that the spacings of the spikes are in correspondence with the V-mold orifices, and against the inverted V-shaped mold. The number of notches receiving the spades is identical to the number of sawtooth profile of the V-shaped mold. The spike guide support is fixed or movable, it is placed opposite in the extension of the spike support, it allows to support the stings during the racking race. It is mounted on 2 columns or drawers and moves manually or automatically to be adapted to any length of spades. The tip of any form of the spike is placed in the spike holder, the tip of the spike is pressed on the guide support and the hooking to the V mold and the inverted V counter mold assembled. The tip of the spades is positioned manually or automatically. It is provided with 3 grooves (more or less) that allow to use all the lengths of spades. It will be advisable to put the spike in the groove corresponding to the good length, by inserting it in one of the grooves or on the outside flank of the support spades (32) directly in case of longer length.
During the entire racking phase, the inverted V-shaped counter mold is held in pressure against the foodstuffs (avoiding that these move during the hooking) by a manual mechanical locking system (or automatic control device), the flanks equipped with a hinge system maintains the V-shaped counter (49) in the open or closed position, while allowing a horizontal tamping stroke.
The skewers are recovered by a demolding operation, using a control member or a manual device, by separating the mold from the counter mold V skewers skewered.

The present invention allows racking of various foods (52), with the use of a V-shaped container or mold (47) - the mold is made with a sawtooth or smooth profile, the counter molded into V inverted (49) is made with a sawtooth or smooth profile, so that they are placed in good coincidence, the recessed shapes are substantially square shapes, allowing the filling of these molds with ingredients of all forms (52), the racking is carried out using spikes of any geometrical shape (53) as illustrated in the FIG. 6 drawings. More generally, the present invention relates to the racking of pieces of any shape by any spike ( 53)
The V-shaped mold (47) is filled with food of all shapes, the spikes of any shape with any kind of mouthpiece, are positioned on the spike holder (32) and are supported straight during the racking stroke by guiding support (23). The spike holder (32) has a corresponding hollow extruded shape which makes it possible to use any form of spades - the spade can not move back during the racking phase because it is blocked by the spade stop (46) which is sliding , removable in the grooves and removable and equipped with a locking system. Then the counter V mold (49) is positioned manually opposite or automatically, the system is thus closed and is ready for the racking phase that is positioned according to the desired length on the sidewall or grooves. The racking is intended to insert the plurality of spades in the food (52), inside the V-shaped mold (47).
The inverted counter mold V (49), keeps the ingredients during the hooking. It is equipped with a tamping assembly consisting of a comb support (3), combs (4) (corresponding to the number of sawtooth profile of the V-mold) of a tamping lock (7) and an indexing finger (48). The tamping set allows to compress more or less, the ingredients against each other if necessary and to determine the length of the desired ingredients, thanks to the combs which block the food and which let the passage of the spades and the set of tamping adjusts the distance of the ingredients at each end of the spades. The preload is done manually by means of an indexing finger (48) which is locked in the holes of the tamping lock (7). Due to the multiplicity of holes the setting is multiple. The racking can be done automatically by pushing the mold against the back. The racking is done by the action of pulling or pushing rectilinearly the assembled assembly of the V-mold and the v-shaped mold towards the spade thanks to the handle system (jacks or other) (9) - racking-in can be done automatically horizontally or vertically. During the entire racking phase, the inverted V-shaped counter mold (49) is held in pressure against the foodstuffs (preventing them from moving during racking-in) by a manual mechanical locking system (56) (or automatic control), the flanks (36), (37) with hinge system (57), (58) hold the V-shaped counter mold (49) in the open or closed position, while allowing a horizontal tamping stroke.
The number of spades corresponds to the number of mold in V, one, two, three, six ten etc ...
The release of skewers is obtained by separating the skewers of the V-shaped mold (47), it can be automatic or manual by a system of jaws or parallelogram.
The device according to the invention is particularly intended for the industrial manufacture of skewers or other compacted products, of any shape on any support.
