These two production methods are unsuitable, hence the weak development of the market to take filled pancakes. 3. Objectives of the invention The invention provides a solution that does not have the drawbacks described above, by providing a method of manufacturing soldered portions of filled pancakes to be eaten by hand. DESCRIPTION OF THE INVENTION The technical solution is to thermopress the pancake layers with the lining interposed between the projecting surface of a relief structure and the flat surface of a second plate or a second relief structure. .
[0002] The invention relates more particularly to a method of manufacturing soldered portions of filled pancakes, comprising a prior step of making pancakes. Description of an Embodiment of the Invention FIG. 1 shows a sectional diagram of a device for manufacturing soldered portions of filled pancakes, intended more particularly to be consumed by hand, according to an exemplary embodiment. The term "pancake" refers in the following document a dish of cooked pasta made from wheat flour or buckwheat. The invention aims to produce portions consisting of pancake layers welded together by the edges forming a closed bag containing a filling, referred to as "pancake-slipper" in the following document. The device 1 comprises an upright U-shaped frame 2 comprising in its lower branch a preferably circular lower plate 3, and in its upper branch, a preferably circular top plate 4 mounted on a vertical sliding device 5. This device allows to move the upper plate 3 to the lower plate 2 while maintaining their plans strictly parallel. The sliding device 5 is either manual with a handle for an operator, which will subsequently be designated by "plaster", or automated by an electric or hydraulic control. In the latter case, the automation manages both the time of the low and high positions of the upper plate, and the pressure exerted by this plate, the means for translational movement of at least one of the plates is automated, the temperature of heating, the pressure exerted by one of the tray on the other and the duration during which the pressure is exerted, being adjustable at a control box. The invention also covers the variant where the lower plate 3 is movable, and the upper plate 4 is fixed. At least one of the trays 3 or 4 is heated, preferably by an electrical resistor, or any other heating means (gas, wood, coal, etc.). The heating means must at least ensure a cooking temperature of 230 ° C. A metal section 6 is placed on the lower plate 3, which is then heated. According to an alternative embodiment, a second section is fixed on the lower face of the upper plate 4 which in this case is also heating. The profile comprises a preferably circular structure surrounding a predetermined number of radial linear structures interconnected at the center of the profile, said raised structures are projecting towards the upper plate (4) to reduce the weld zones to a minimum or zero thickness . The circular shape of the profile is the most optimal and therefore preferred form, to obtain equal parts and produce the least possible loss, but any other shape is conceivable. Two adjacent structures delimit with a portion of circular structure connecting them at their ends, the periphery of a cavity defining a part to manufacture a single crepe slipper. The diameter of the circular structure is smaller than that of the plate with which it cooperates. The profile 6 is advantageously made of food grade aluminum or stainless steel. Its height is about 1 centimeter. The base of the profile is flat to land on the lower plate and its upper part has a projecting edge. The lower and upper stops allow the two profiles to be positioned so that the radial structures and the circumferences are perfectly one on the other. The downwardly facing side of the upper profile does not need to protrude like that of the lower profile, this surface is preferably flat. The lower section 6 is intended to be covered by a first layer of pancakes 9. This first layer may consist of one or more pancakes. A salty or sweet filling is placed in the cavities of the first layer which is sufficiently flexible and deforms because of the cavities of the profile 6, the crepe maker placing as many fillings as parts. The lining 10 is covered with a second layer of crepes 11. A control box 12 makes it possible to adjust the temperature of the trays. If the movement of the upper plate is automated, then this box also controls the movements of this plate.
[0003] Fig. 2 shows a manufacturing device seen from above. According to this embodiment, the device comprises an upper plate 4 pivotally mounted on a shaft 13, and two lower plates 3 whose centers are equidistant from the shaft 13 and on which the upper plate can be positioned. In this way, the pancake maker can prepare a first assembly of pancake layers packed on a first lower platen, while a second lower platen is pressurized with the upper platen for making a second pancake-slipper assembly. . At the beginning of manufacture, the plaster regulates the heating of the trays, at least 20 that which is associated with a profile (step 3.2).
