专利说明:

[001] The present invention relates to the food preparation equipment sector.
[002] In more detail, the invention relates to an oven for grilling food.
[003] The ovens normally used in the food preparation field, both electric and powered by liquid fuels or gas, substantially comprise an external enclosure, generally made of insulated aluminum or steel walls, enclosing an internal volume subdivided in a zone of heat production and a food cooking zone.
[004] The outer casing in general comprises a wall, at least partially transparent, and at least one door to open said oven, which normally comprises said transparent part and opens frontally, for the operator.
[005] The zone of heat production comprises an electric coil that heats, or several nozzles emitting gas ignited by a spark, or other means for the combustion of other types of fuel.
[006] The cooking zone is provided with one or more grids arranged vertically at different heights, in which the food can be placed directly.
[007] Sometimes, for ovens supplied with several grids, the door is not a single piece, but is subdivided into individual doors, each articulated at the level of one of the said grids.
[008] Disadvantageously, each time the door is opened to insert the food or check the degree of cooking, a large amount of heat escapes from the oven and the temperature in the cooking zone drops dramatically, compromising the success of food preparation. Furthermore, in order to return to the correct temperature, the oven requires greater fuel consumption and therefore greater expense.
[009] The operator is also hit by the heat that escapes from the oven, and the grills removed from the oven drip cooking liquids directly on the door or on the floor.
[0010] Furthermore, these types of ovens do not allow the use of fossil fuels, such as wood or coal, for example, meaning that they cannot be used in barbecue.
[0011] Braziers are an alternative to the said traditional ovens, especially in barbecue and, therefore, using fossil fuels.
[0012] Braziers are containers made of steel or cast iron formed from a surface on which the wood is placed, with specific holes allowing the ash to fall into an underlying collection tray. A grid for cooking food is placed at a variable distance above the plane. This is the most common type of "barbecue" and can also be made of masonry, closed on three sides, usually on the back and sides, to provide protection from the wind and unavoidable sparks from the embers.
[0013] Disadvantageously, for said braziers there is no front closure and, therefore, in this case too, there is an enormous dispersion of heat.
[0014] Even more disadvantageously, several grids cannot be arranged vertically above each other, as the heat would not reach them evenly.
[0015] In addition, the user is constantly hit by heat and smoke, making work unpleasant and unhygienic.
[0016] US 2009/320882 A1 describes an oven for grilling food, but devoid of any transparent portion to visualize the food contained therein, in which each single grate that supports the food during cooking can be extracted only frontally towards the user who is harmed by the heat and smoke emitted and runs the risk of getting burned with liquids that are too hot to cook.
[0017] This invention proposes to overcome these limits, providing an oven for grilling food that does not waste heat, thus having a good efficiency, that does not reach the operator with heat or smoke and that recovers the cooking liquids when extracting the grids and moving the food.
[0018] Another objective of the invention is to provide an oven that is easy to use in a domestic environment and in a restaurant environment.
[0019] Additional objective of the invention is to provide an oven that is practical, safe to use, fitted with adjustment and safety devices, suitable for use with solid, liquid or gaseous fuels or with electricity.
[0020] These objectives are obtained by the oven for grilling food supplied with: - an external wrapper, which consists of walls defining an internal volume comprising a transparent part; - at least one door,
[0021] in which said volume is subdivided into a zone for the production of heat by means of heating means and a cooking zone comprising at least one grid on which said food is placed,
[0022] characterized by the fact that said at least one door is associated with said at least one grid, which is slidably supported within said housing and comprises a bulkhead, opposite to said door with respect to said grid, arranged to close said cooking zone when the grid is completely removed from said oven.
[0023] According to a first embodiment of the invention, said at least one grid is slidably associated with said external housing by means of telescopic guides arranged to allow its lateral exit from the oven.
[0024] An embodiment of the invention provides that said transparent part belongs to a wall of said oven placed in the front, which can be opened to load said fuel and cleaning operations.
[0025] According to a further embodiment of the invention, said oven comprises a drip tray positioned so as to be below said at least one grid when the latter is extracted from said oven. In particular, said drip tray comprises a perforated surface and an underlying drainage tray for cooking liquids.
[0026] In accordance with yet another embodiment of the invention, said oven comprises a smoke outlet duct that connects said cooking zone with the external environment, and said duct is provided with a butterfly valve that is selectively operable by means of of motion accessible from the outside.
[0027] Furthermore, the said enclosure comprises, in a position that corresponds with the said heat production zone, a ventilation grid for the introduction of combustion air, provided with a shutter that determines the size of the openings of the same , selectively operable by means of movement accessible from the outside.
[0028] Advantageously, said heat production zone comprises a grid to support solid fuel, arranged to engage support means placed at different heights with respect to said cooking zone above. Said heat production zone also comprises a tray to collect the ashes derived from combustion.
[0029] In a preferred embodiment of the invention, said oven comprises a food heater compartment positioned laterally and thermally connected with said heat production zone.
[0030] The invention has many advantages.
[0031] The screens associated with each grill close tightly the volume used for the cooking zone when the grill, during use, is completely extracted from the oven to check cooking and food preparation.
[0032] Advantageously, the internal volume of the oven always maintains a constant temperature, the foods are not subjected to sudden changes in temperature and, therefore, their cooking is optimal, and the operator is not hit by any burst of heat.
[0033] Even more advantageous, during use there is no heat loss to the outside, thereby optimizing and reducing fuel consumption.
[0034] The grills, which are totally independent of each other including the door, allow different types and cooking times. Advantageously, each grid is provided with a temperature control probe connected to the display medium placed in the external housing.
[0035] The grids are sliding on telescopic guides arranged to withstand high temperatures, but they are also advantageously interchangeable: in fact, each food item requires a particular grid with a specific geometry and spacing of the cracks.
[0036] The drip tray makes it possible to collect cooking liquids from food when the grids are removed from the oven, thus always ensuring cleanliness of the work area.
[0037] The oven is supplied with wheels, associated with the outer casing, allowing the oven to move. In the case of domestic use of said oven, the wheels are more advantageous in that they allow the oven to be moved out of the house also for parties and meetings.
[0038] The smoke outlet conductor ensures the perfect disposal of used gases, but at the same time, thanks to the selectively operable butterfly valve associated with it, it is possible to adjust said outlet to control the degree of flavoring and smoke of the food being cooked.
[0039] On the other hand, the combustion air control plug, placed in the outer casing in a position that corresponds to the heat production zone, advantageously makes it possible to control the flame and fuel consumption, which also results in savings of costs.
[0040] Whenever solid fuel is used, such as wood or coal, for example, the support grid can advantageously be moved up or down with respect to the grids on which the food is seated: this makes it possible to position even larger quantities of fuel within the heat-producing zone, thereby allowing the oven to be prepared in advance with a single operation, even for long cooking times. Furthermore, the heat source can be placed closer or further away from the food to be cooked according to the type of food and the corresponding cooking method.
[0041] At the bottom of the oven, below the heat production zone, there is a tray to collect the ash derived from combustion, so that no ash is deposited directly in the outer shell and cleaning operations become easier.
[0042] Advantageously, the accessory elements can be applied in said oven making it more functional, such as a food heating compartment, for example, arranged to keep cooked food at the appropriate temperature, indirectly exploring the heat of the combustion zone.
[0043] The oven is made entirely of steel and is therefore easily cleaned.
[0044] The advantages of the invention should appear more clearly from the following description of the preferred modalities, made by means of indicative and non-limiting examples, with reference to the Figures, in which:
[0045] Figures 1, 4 and 5 show an axonometric view of an oven for grilling food according to the invention, at different times of use;
[0046] Figure 2 shows an axonometric view of a detail of the oven illustrated in Figure 1;
[0047] Figure 3 shows a partially exploded axonometric view of the oven illustrated in Figure 1.
[0048] With reference to the Figures, an oven 1 for grilling food is shown, in particular an oven powered by solid fuel, such as wood or coal.
[0049] Said oven consists of an outer casing 2, which consists of steel walls, which define an internal volume subdivided into a heat production zone 5 and a cooking zone 6.
[0050] In front of said external casing 2 there is a part in transparent glass 3.
[0051] In correspondence with the position of said transparent part 3, said outer casing 2 can be opened for cleaning operations and to prepare the oven for use.
[0052] The fuel to be burned is placed inside said heat-producing zone 5, while the food is disposed within said cooking zone 6.
[0053] In particular, said heat production zone 5 comprises a grid 16 for supporting solid fuel.
[0054] Said support grid 16 engages the appropriate support means 17, guides or protuberances, placed at different heights with respect to said cooking zone 6 above.
[0055] Said heat production zone 5 still comprises a tray 18 for collecting ashes derived from combustion, disposed below said support grid 16.
[0056] Said outer casing 2 further comprises, in a position that corresponds with said heat production zone 5, a ventilation grid 14 for introducing combustion air into the furnace.
[0057] Said ventilation grid 14 is provided with a movable shutter which determines the size of the openings thereof, selectively operable by means of movement 15 provided in said external housing 2 and therefore accessible from the outside.
[0058] Within said food cooking zone 6, a plurality of grids 7 are provided, one above the other, in which the food can be placed directly.
[0059] Each grid 7 can slide on specific telescopic guides 19, and is associated on one side with a door 4 made in said outer shell 2 and on the other side with a bulkhead 8, as shown in particular in Figure 2.
[0060] The telescopic guides 19 allow the grids 7 to come out laterally from the oven.
[0061] Each door 4 is completely independent and is provided with a handle 20 to allow the operator to open it.
[0062] Each bulkhead 8 is arranged to close said cooking zone 6 when the corresponding door 4 is opened and the corresponding grid 7 is completely outside said oven 1.
[0063] Each grid 7 is provided with a probe, arranged to measure the surrounding temperature, which can then be displayed on specific thermometers 21 provided in the outer shell 2.
[0064] Said oven 1 comprises a drip tray 9 positioned on one side so that it underlies each grid 7 when the last one is outside the oven.
[0065] Said drip tray 9 comprises a perforated surface 10 and drainage tray 11 for cooking liquids falling from the grids 7 above.
[0066] Said oven 1 comprises a smoke outlet duct 12, made in said external casing 2, arranged to connect said cooking zone 6 with the outside environment in order to let the gases released by the burned fuel.
[0067] Said duct 12 is provided with a butterfly valve which is selectively operable by means of movement 13, provided in said external housing 2 and therefore accessible from the outside. Said means of movement 13 comprise a lever that opens or closes, completely or partially, said butterfly valve in order to adjust the amount of smoke leaving said conduit 12 and the degree of aromatization and smoke, typical of barbecue, of food inside oven 1.
[0068] In accordance with the modalities not illustrated, said oven may comprise several wheels arranged to allow its movement, and a food heating compartment positioned on the side, below the drip tray, thermally connected with said heating zone. heat production 5.
[0069] The use of oven 1 for grilling food according to the invention is described below.
[0070] The user loads oven 1 with fuel, for example, wood. Momentarily opening the front wall provided with the transparent part 3 and placing the wood on the grid 16 provided in the heat production zone 5.
[0071] Once the wall has been closed again and combustion has started, the user opens each door 4 one by one and places the food to be cooked on the respective grids 7, choosing the position of the grid to load according to the need for cooking heat of the various foods.
[0072] During the food disposal phase and subsequent verification phases, the volume inside the oven 1 maintains a constant temperature and the heat does not escape thanks to the individual screens 8 that tightly close the cooking zone 6 when the grills are fully extracted .
[0073] Advantageously, the user can operate in front of the transparent part 3 with a clear view of the interior of the oven 1, and can open the doors 4 laterally without being hit by the heat.
[0074] The invention, as described and illustrated, achieves the determined objectives.
[0075] Naturally, the details of construction, materials, dimensions, thicknesses and modalities can vary considerably with respect to what has been described and illustrated, however without departing from the scope of the present invention, as described, illustrated and claimed.
